Apple Pie Caramel Popcorn Bars
Ingredients
10-12 cups bag Gaslamp Sea Salt and Olive Oil Popcorn
1 teaspoon apple pie spice
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
3/4 cup (6 ounces) unsalted butter
1 cup light brown sugar, packed
1 teaspoon vanilla extract

Directions
1. Heat the oven to 250°F. Line two baking sheets with parchment or nonstick baking mats. Mix together the pumpkin spice, salt, and baking soda and set near the stove.
2. Melt the butter in a 2-quart or larger sauce pan on the stovetop. Do not use a smaller pot; the sugar mixture will boil over the sides. Once melted, stir in the brown sugar. Increase the heat to medium-high and bring the butter-sugar mixture to a boil. Once boiling, boil for 3 to 4 minutes or until the sugar mixture reaches approximately 275°F.
3. Remove the pan from heat and stir in the vanilla, pumpkin pie spice, salt, and baking soda. The mixture will bubble up immediately and double in size; be very careful to avoid splatters. Stir the mixture until the spices are incorporated and you make a smooth sauce.
4. Pour 1/4 of the sauce over the popcorn and stir to combine. Continue pouring a bit of the sauce and stirring until all the sauce has been stirred into the popcorn.
5. Allow popcorn to cool slightly before handling. Press into a parchment paper lined 8x8 or 9x9 baking dish. Press Popcorn in making sure it is tight before it hardens.
6. Allow popcorn to sit for at least 20 minutes before cutting into bars.

Pumpkin Spice Latte Popcorn
Ingredients
7 cups Gaslamp Sea Salt and Olive Oil Popcorn
3 tablespoons unsalted butter, melted
1 tablespoon packed light brown sugar
1 teaspoon pumpkin pie spice
1 teaspoon instant espresso powder

Directions
1. Put the popcorn in a large bowl. Stir together the butter, brown sugar, pumpkin pie spice, and espresso powder in a small bowl.
2. Drizzle the butter mixture over the popcorn and toss gently until combined. Serve immediately or store in an airtight container for up to 1 day.

S'mores Popcorn
Ingredients
1 bag Gaslamp Kettle Corn Popcorn
64 mini marshmallows or 8 big ones
1/2 cup brown sugar
1/4 cup butter
One sleeve graham crackers
2 chocolate candy bars, chopped

Directions
1. Place popcorn in a bowl.
2. Combine the marshmallows, brown sugar and butter and melt in the microwave. Make sure to stir every 20-30 seconds so everything melts and combines smoothly.
3. Pour over popcorn.
4. Mix in the graham crackers and chocolate to finish.
