Chef Adrian Day-Murchison of Le Cordon Bleu in Sacramento shares with us a variety of mealtime and snack solutions perfect for little ones all school year long, such as how to revamp the basic brown bag and how to whip up power-packed breakfasts fit for a scholar. From Mediterranean chicken pita pockets to acai parfaits, Le Cordon Bleu chefs can share back-to-school eats that are so good, kids will be raising their hands for seconds. She plans to demo the BBQ chicken salad and briefly speak to the additional dishes that have been prepped in advance.

Watermelon and Mozzarella Kebobs
Ingredients:
Seedless Watermelon, cut into 1 inch cubes - 1 lb.
Part skim mozzarella balls - 1 lb.
Balsamic vinegar - 8 oz.
Sugar - 1 oz.

Method of Preparation:
1. Combine vinegar and sugar in a saucepot and cook on medium heat until it's reduced by half. Allow to cool until it's a syrup consistency. Set aside.
2. On a wooden skewer, alternate four pieces of watermelon and three pieces of mozzarella.
3. Lightly drizzle balsamic reduction on the skewers and serve.

Power Fruit and Veggie Smoothie
Ingredients:
Strawberries (fresh or frozen) - 6 oz.
Baby spinach leaves - 2 oz.
Blueberries - 1 oz.
Baby carrots - 1 oz.
Pomegranate juice - 2 oz.
Chia seeds - 1 tsp.
Crushed ice - 4 oz.

Method of Preparation:
1. Combine ingredients in a blender and blend on high until combined and smooth.
2. Serve immediately in chilled glass.

BBQ Chicken Salad Cucumber Boats
Ingredients:
Chicken breast, on the bone - 1 lb.
Yellow onions, small diced - 4 oz.
Celery stalks, small diced - 4 oz.
Cilantro, rough chopped - ½ bunch
BBQ sauce - 4 oz.
Water - 32 oz.
Bay leaf - 2 ea.
Salt and pepper - to taste
Garlic cloves, smashed, 3 ea.
Hot house cucumber, cut in half lengthwise and seeds hollowed out - 2 ea.

Method of Preparation:
1. Combine water, bay leaf and garlic cloves with chicken in a stockpot and bring to a boil over high heat. Reduce down to a simmer and cook until chicken is cooked all the way through, about 30-45 minutes. Drain and cool.
2. Shred chicken into pieces off the bone. Combine chicken in a bowl with onions, celery, cilantro and BBQ sauce. Season to taste with salt and pepper.
3. Scoop into cucumbers and cut in half to serve.
