Roseville Team Wins Rachael Vs. Guy: Viewer Edition!

Pretzel Crusted Chicken Cutlet
2 c. pretzels
1 c. bread crumbs
1/4 c. Parmesan cheese
salt/pepper to taste
1 c. flour
1 egg
4 chicken cutlets
3 T EVOO (extra virgin olive oil)

In food processor, combine first 4 ingredients until grainy texture appears, not too fine. Dredge chicken cutlet in flour, dip in egg, then dip in pretzel mixture. Cook over medium high heat in EVOO (extra virgin olive oil) until thoroughly cooked. Do not overcook or you will have burnt pretzel chicken cutlets!

Honey Mustard Dipping Sauce:
1/4 c. dijon mustard
4 T mayonnaise
1/2 c. honey

Mix first 2 ingredients well, then add honey and stir until well incorporated. Chill for best results.

Buffalo Wing Dipping Sauce:
1/4 c. butter
1/4 c. Tabasco Hot Sauce (or your preferred hot sauce)

Melt butter and add hot sauce and stir. You may need to add more hot sauce depending on your taste. Keep warm while dipping for best results.
