Chef Marisa Churchill also has her own healthy baking show sponsored by Fage Greek yogurt. This morning she joins us in studio to show us how to make delicious and healthy perfect breakfast muffins using some very healthy alternatives!

Delicious and Healthy Perfect Breakfast Muffins
Makes 14
(Basic healthy muffin)
1 ½ cups all-purpose flour
½ cup white whole wheat flour
1 teaspoon salt, divided use
½ teaspoon black pepper, divided use
1 teaspoon fresh thyme
1 tablespoon baking powder
½ teaspoon baking soda
1 1/8 cup reduced fat milk
1/3 cup plain reduced fat Greek yogurt, such as Fage 2%
1/3 cup algae oil, divided use, such as Thrive oil
2 eggs

(Mix-ins)
¾ cup gruyere cheese, grated
2/3 cup Applewood smoked ham (cut ¼" thick)
1 cup yellow onion, diced
-or-
½ cup swiss cheese, grated
2/3 cup roasted turkey (cut ¼" thick)
2/3 cup sundried tomatoes
(optional topping)
2 tablespoons sunflower seeds
1 teaspoon flax seeds

Preheat the oven to 350F with a rack in the center position. Line 14 muffin tins with paper liners. If not using paper liners, then thoroughly grease the ramekins with oil.

In a large mixing bowl, combine the all-purpose and whole wheat flour. Add the baking powder, baking soda, salt, pepper and the grated Gruyere cheese. Whisk until thoroughly combined. Create a well in the center of the dry ingredients. Pour in the milk, yogurt, the remaining ¼ cup of oil and the two eggs. Whisk until well combined. Whisk in the cooled onion and ham mixture.

To prepare the mix-in filling. Place a skillet over medium heat. Add 2 tablespoons of the oil. Once hot, add the diced onion, if preparing with onion and ham. Saute the onions until they turn golden brown. Once browned, remove the skillet from the heat. Stir in the diced ham and cheese. For the Turkey muffins, slice the sundried tomatoes into thin strips, and stir in the turkey, cheese and sundried tomatoes.

Divide the batter evenly, about a scant ¼ cup each, between the 14 muffin tins. Sprinkle the sunflower and flax seeds on top of the muffins. Bake the muffins for about 15 minutes, cool slightly before serving.
