Mason Jar Recipes

Creamy Citrus Chicken and Orzo Salad in a Jar Recipe

Ingredients

4 whole 12-ounce mason jars

2 cup orzo (cooked according to package directions)

1 whole chicken breast (grilled or poached)

2 whole roasted red peppers (diced)

1 cup red onion (finely chopped)

2 cup fresh spinach

Creamy Citrus Dressing:

2 tablespoon greek yogurt

1/4 cup orange juice

1 1/2 teaspoon orange zest

1 teaspoon balsamic vinegar

2 tablespoon olive oil

salt and pepper (to taste)

Directions

To make dressing: In a small bowl, combine greek yogurt, orange juice, orange zest, balsamic vinegar, olive oil, salt and pepper. Whisk until well-combined. Set aside.

Using a fork, shred grilled chicken into small pieces.

Assemble each mason jar in the following order:

First (bottom) layer: 2 or 3 tablespoons creamy citrus dressing

Second layer: 1/2 cup roasted red peppers

Third layer: 1/4 cup red onions

Fourth layer: 1/2 cup orzo

Fifth layer: 1/4 cup shredded chicken

Sixth (top) layer: 1/4 cup spinach

4. Store in the refrigerator until ready to eat. When ready to serve, dump jar’s content into a bowl, toss, and enjoy!

 

Chopped Taco Mason Jar Salad

Ingredients

5 wide mouth quart size mason jars

1 lb ground turkey

1 can black beans, drained

1 packet taco seasoning

1¼ cups salsa

5 tablespoons plain Greek yogurt

1 quart cherry tomatoes, halved

5 mini cucumbers, sliced

1 small to medium red onion, chopped

2 avocados, chopped

juice from half of a lime

5 cups chopped romain lettuce

Instructions

in a medium pan cook ground turkey until no longer pink. Add black beans, seasoning packet, and the amount of water stated in seasoning packet directions. Let taco mixture cool.

Divide ingredients among mason jars starting with salsa then adding greek yogurt, tomatoes, cucumbers, onions, jalapeños, avocados, taco meat, then lettuce. Place lid on and close tight. No need to vacuum seal or anything like that.

When ready to eat, shake real good, then pour into a bowl and enjoy. Can serve with tortilla chips.

 

Avocado Mango Black Bean Salad

Ingredients:

2 ripe but firm avocados, halved, peeled and cubed

1 tbsp fresh lime juice

2 ripe but firm mangoes, peeled and cubed

1 jalapeno, seeded and finely chopped, or 1/2 cup chopped red onion for a mild flavor)

2 tbsp lime juice

1 tsp apple cider vinegar

2 tbsp chopped cilantro, plus more for garnish

1/2 tsp sea salt

1/2 tsp honey

3 tbsp extra-virgin olive oil

1 – 15 oz. can black beans, rinsed and drained

4 cups of spinach

1 1/2 cups of cooked quinoa

Directions:

Add the avocado, 1 tbsp lime juice, mango, and jalapeno to a large bowl and gently toss.

Whisk together 2 tbsp lime juice, apple cider vinegar, cilantro, salt, honey together in a small bowl. Once those ingredients are mixed well, add olive oil slowly while continuing to whisk.

Pour dressing over avocado mixture, add black beans and gently toss.

Serve over a bed of spinach with quinoa.

 

 

Deconstructed California Roll Recipe

Ingredients

4 whole 12-ounce mason jars

2 cup white or brown rice (cooked)

1 tablespoon rice vinegar

1 teaspoon sugar

1 tablespoon soy sauce

2 whole avocados (skin and seed removed, diced)

2 tablespoon lemon juice

2 whole cucumbers (peeled, seeds removed, cut into small matchstick-sized pieces)

4 whole nori sheets (cut into small pieces)

1 cup lump crab meat (picked over)

 

Directions

Heat the vinegar and sugar in a small saucepan over medium heat until the sugar is dissolved. While your brown rice is still warm, pour the vinegar-sugar mixture and soy sauce over it and toss to combine. Let cool to room temperature.

While rice cools, brush avocado chunks with lemon juice to prevent browning.

Assemble each mason jar in the following order:

First (bottom) layer: 1/2 cup rice

Second layer: 1/2 cup cucumber (or 1/2 cucumber)

Third layer: 1 nori sheet (cut into small pieces)

Fourth layer: 1/4 cup crab

Fifth layer: 1/2 avocado

Store in the refrigerator until ready to eat. When ready to serve, dump jar’s content into a bowl, toss, and enjoy!
