Recipe: Butter Chicken

  • Chicken (i use BBQ roasted chicken, available at Bel Air)
  • Ginger garlic paste - 2 spoons
  • Tomato Puree / sauce 1/2 a can( for more gravy, you can add full can)
  • Bay leaf - 1
  • Cinnamon powder - a pinch
  • Cardamom - 1 ( i use a powder a pinch)
  • Dried fenugreek leaves
  • Green Chilies (only if you want it hot)
  • Sugar - 1-2 Tsp
  • Salt as per taste
  • Red Chili powder for color
  • Margarine /Butter ( i use margarine )
  • Heavy Whipping cream - 1 cup

Method
Shred the chicken and keep it aside.

In a deep pan, melt butter / margarine, a bay leaf, put cardamom, cinnamon. Saute for few seconds
Add ginger garlic paste and saute till it becomes brown in color
Add tomato sauce and let it start boiling and lower the heat to medium.
Add salt and sugar and cover for 5- 7 mins
Add green chilies.
Once the tomato sauce is thickened, add the chicken and mix for a minute or so. Then crush the fenugreek leaves in your palm and sprinkle over chicken and mix. keep mixing and stirring for a minute or so and then add heavy whipping cream and keep stirring. Garnish with coriander leaves.
