Carrot Zucchini Pumpkin Cake
Mega viewer Danica Corey was diagnosed with a rare form of cancer seven years ago. She had to remove processed foods from her diet, forcing her to get mighty creative with cooking at home. So she wanted to share her Carrot Zucchini Pumpkin Cake recipe.
Carrot Zucchini Pumpkin Cake
2-cup Whole Wheat Flour
1/2 cup almond flour
2 tsp. baking soda
1 tsp. cinnamon
3 tsp. pumpkin pie spice
2 tsp. vanilla
3 eggs beaten
1/2 tsp. grated ginger
2 -cup carrots, shredded
2 -cup zucchini, shredded
1. Sift together all the dry ingredients.
2. In another bowl, mix sugar, honey, pumpkin, eggs, vanilla, and ginger together.
3. Mix together the dry and wet ingredients.
4. Then, add carrots and zucchini and stir to combine.
5. Grease a 9X13 pan, and preheat oven to 350.
6. Pour mix into the pan.
7. Bake at 350 for 45-55 minutes, or until a toothpick comes out clean. Sprinkle powder sugar on top. Cool for 10-15 minutes in the pan.
8. Cut and serve.
