Mardi Gras Omelette

1 TB Butter
¼ cup Tomatoes, Diced
3 ea Eggs
2 oz Shredded Cheddar Cheese
1 oz Ham, Diced
1 oz Pork Sausage, Cooked and Diced
1 oz Bacon, Cooked and Diced
1 oz Andouille Sausage

1. Melt butter in non stick 8 inch pan over medium heat.
2. Sauté tomatoes, ham, pork sausage, bacon and andouille sausage for one minute.
3. Add eggs and stir until they start to set.
4. Add shredded cheddar cheese while eggs finish cooking.
