Stuffing Throwdown

Marianne's Sausage & Sage Family Stuffing
This is the only stuffing recipe I've ever known. My mom used to boil the giblets for several hours to make homemade broth; I tried that for a year or two until I discovered boxed broth! It's a huge time-saver - but if you want to go old school, giblet broth is the way to go!

*Remember to make this the day before you're using it, and refrigerate overnight. Never put warm stuffing into a cold turkey!

1 lb bulk sausage
3 medium-sized yellow onions, chopped
1 bunch celery, chopped
1 loaf French bread, cubed and dried
1 container chicken broth
Poultry seasoning
Kosher salt

Brown sausage; drain. Return to pan and add onions and celery; cook until celery is tender. (It already smells like Thanksgiving at this point!!)

Transfer mix to a large bowl; add bread crumbs and stir. Add chicken broth in small amounts and mix to moisten to desired consistency. Add poultry seasoning, starting with about a tablespoon, and stir to combine. Add salt to taste.

Refrigerate overnight; stuff turkey immediately before cooking. Bake any extra in a side dish pan rubbed with 1 T butter, for about 40 minutes. Cook turkey at 325°, for ½ hour per pound; remove stuffing to a serving dish! Yum!

Cornbread Dressing by G. Garvin

1 batch corn bread
1/2 cup (1 stick) butter
2 medium leeks, diced
4 stalks celery, diced
1 1/2 teaspoons poultry seasoning
1 1/2 teaspoons dried sage leaves
2 cups veggie stock
1/2 cup heavy cream

First prepare corn bread; set aside. Preheat oven to 350 F. In a large saucepan melt butter over medium heat. Add leeks and celery; sauté until tender. Stir in poultry seasoning and sage. Crumble in corn bread and combine well. Stir in veggie stock and cream; mix well.

Pour corn bread mixure into a greased 13x9x2" pan. Bake for 30 to 35 minutes or until golden.

Ju's Grandmas stuffing recipe

1lb lean ground beef
1c diced carrots
1c diced celery
1c diced white onion
2 cloves garlic minced
1 container plain bread crumbs
1 egg
1 tablespoon mustard
1 small can sliced olives
Salt & pepper to taste
Pinch of ground cloves

In a bowl add salt and pepper to meat ...mix in onions, then carrots and celery.
Slowly mix in bread crumbs
Add egg
Mix well
Add cloves
Add mustard
Add olives

Cook inside turkey.
Or...
Poor into loaf pan, cover and bake 350 for 90 min
