As you prepare, bite, chew, and digest, you create a series of mechanical and chemical changes that affect a food’s nutritional content (i.e. the nutrients it contains) and each nutrient’s “bioavailability” (i.e. the degree to which it can be absorbed by your body). This means some nutrients are indeed best available when the foods containing them are eaten raw.
