YouTube Mom Joni Hilton's Valentine Pavlova Recipe
Ingredients
4 egg whites at room temperature
Pinch of salt
1 Cup sugar
1 teaspoon lemon juice or vinegar (helps stabilize meringue)
1 teaspoon vanilla extract
1 Tablespoon sifted cornstarch
Whipped cream
2 Cups berries
Directions
1. Heat oven to 300 degrees. Beat egg whites and salt until foamy, but not dry. Slowly beat in sugar until stiff and glossy. Fold in juice, extract, and cornstarch.
2. Line a baking sheet with parchment paper, and spread meringue into a heart shape, about 8 inches wide (if tracing a heart or circle, turn paper over so meringue will not absorb ink or pencil mark). Or, make several smaller hearts, but reduce baking time depending on their size.
3. Place baking sheet on middle rack, and bake for 1 hour. Turn off oven and leave pavlova in oven for 30 minutes more. When meringue is completely cool, top with whipped cream and berries; serve.
