Artichoke Pasta Sauce

Ingredients:

  • ¾ cup olive oil
  • 4 garlic cloves, minced
  • 1 onion, chopped
  • 3 Tbs fresh parsley, chopped
  • 18 small artichokes, trimmed to hearts and sliced
  • Salt and pepper to taste

Directions:

Sauté onion and garlic until softened. Add the rest of the ingredients, stir to combine and cover. Artichokes are done when just softened.
Add to a pasta. (Short works best.)
