Artichoke Pasta Sauce
Ingredients:
- ¾ cup olive oil
- 4 garlic cloves, minced
- 1 onion, chopped
- 3 Tbs fresh parsley, chopped
- 18 small artichokes, trimmed to hearts and sliced
- Salt and pepper to taste
Directions:
Sauté onion and garlic until softened. Add the rest of the ingredients, stir to combine and cover. Artichokes are done when just softened.
Add to a pasta. (Short works best.)
