Show Us Your Uncle!

Here's the recipe  for "Uncle Maloney's Strawberry Jam"

You will need....

5 cups Ripe Strawberries (chopped into pieces)

7 cups granulate white sugar

1 box dry pectin (1.75 ounces)

1/2 tsp. Butter or Margarine

2 Tbsp. Gran Marnier (optional)

8  1/2 pint mason jars with lids and bands

First sterilize the jars and lids in boiling water for 5 minutes, drain, and set aside

In a separate pot cook the strawberries under high heat (add the pectin and stir in throughly when the strawberries are cooking and add the 1/2 tsp. of butter to reduce excess bubbles)

Bring the strawberries to a "rolling boil" (a boil that cannot be stirred down)

Stir in the sugar and stir until dissolved.

Keep on high heat stirring frequently.

Bring the mixture to a rolling boil for 1 minute and remove from heat

Add the 2 Tbsp. Of Gran Marnier ( optional--- the alcohol will boil off immediately)

Use a laddle to transfer the jam to the 1/2 pint jars or into a large pyrex cup and pour to within 1/8 inch of the top of the jars.

Place the lids and bands onto the jars and be careful of the heat (use a hot pad or similar) lids do not have to be highly tightened

Place the jars back into the boiling water for 10 minutes

Remove jars from the boiling water and set on the counter.. turn jars upside down every 30 minutes as the jam cools and becomes  firm (this helps distribute the strawberries so they don't all float to the top of the jar)

Shawn Wayans
