Crispy Fried Onigiri with Spicy Ahi from Celebrity Chef Russell Siu
Ingredients
4 ounces ahi, cut into 1/4 inch cubes
1 tsp. mayonnaise, best food or koopie
1 1/4 tsp. shiraccha
1/2 tsp ginger, grated
1 tsp. yuzu tobiko caviar
3 Tbsp. green onions, finely chopped
3 Tbsp. sweet onions, finely chopped
Kosher or sea salt to taste
2 cups cooked rice
Directions
Season ahi with salt. Mix all the ingredients together in a non reactive bowl (do not over mix). Scoop about 1/4 cup of rice and make a patty. Place ahi in center and fold to cover ahi. Deep fry in oil at 350 degrees for about 1 minute. Brush sides with your favorite teriyaki sauce and wrap in nori and serve.
