Fried Rice and Spam

On Wikipedia, Spam is a precooked meat product made by Hormel. Spam is derived from Spiced Ham. Today, I fried up some Spam, rice and eggs. By the way, if you want to see the musical Monty Python's Spamalot, it will be at the Three Stages at Folsom Lake College on November 17 – 19. Courtney featured the actors this morning on the show so it gave me a good reason to make breakfast!

So, some of you have asked for my fried rice recipe… um, there really isn't one but I can tell you what I did. This is NOT the fancy way of making fried rice! (T= tablespoon)

Heat up 2 T vegetable oil in a pan. Scramble 2 eggs in that oil (I just scramble them in the pan). Add about 3 cups of cooked rice which has been cooled down to room temperature or you can cook it the day/night before. Keep everything at medium heat. I then added about 1 and 1/2 cups of frozen mixed vegetables (you can thaw them or just pour directly from the bag but make sure you heat all the way through). not too much and not too little). It will appear like fried rice. Keep stirring. Add salt and pepper to taste. Just keep tasting it until you get it the way you like it. Fry your Spam in another pan (I added oil). Fry an egg – preferably over easy – and serve it over the rice! Have fun! Tina
