Esquire Grill At Terminal B
Sacramento International Airport's new Terminal B is about to open and you'll find some hometown restaurants in the mix. Esquire Grill is opening an eatery at the airport and today Executive Chef Kurt Spataro is giving us a sampling of what we will find there. He whipped up some awesome Ahi Tuna Burgers and is even sharing his recipe.
Ahi Tuna Burgers
4- 4 1/2 oz tuna burgers patties (recipe below)
4 burger buns
½ cup spicy mayonnaise
1 cup shredded iceberg lettuce
¼ cup thinly sliced red onion
2 Tbsp pickled ginger
vegetable oil as needed
Heat the oil in a cast iron skillet or griddle over high heat. Place the burger patties in the pan and sear the patties on both sides leaving the center rare. While the burgers are cooking, slice the buns in half, brush with a little oil and toast them under a broiler or on a flat griddle. Spread the mayonnaise generously on both sides of the bun. Place the cooked burger on the bottom half of the bun and garnish with the red onion, ginger, and shredded lettuce.
Tuna burger mix
2 # ahi, chopped fine by hand
¼ cup soy sauce
1-tablespoon sesame oil
1 tablespoon cracked pepper
1 tablespoon black sesame seeds
1-tablespoon white sesame seeds
½ cup panko
Mix all
Portion 4-½ oz
Spicy Soy Mayonnaise
2 cups mayonnaise
¼ cup soy sauce
2 Tbsp Siracha
Combine all ingredients in a mixing bowl and mix thoroughly.
